Potatoes. Is there a more versatile, more delicious vegetable? They are relatively cheap, easy to grow, and packed with nutrients. Potatoes have protein, carbohydrates, fibre, vitamin C, vitamin B6, potassium, manganese, magnesium, phosphorus, niacin, and folate. These nutrients make it an incredibly beneficial root vegetable to the body.

The starch in potatoes acts as a prebiotic. A prebiotic refers to food that is good for the bacteria in the large intestines. Prebiotics improve overall gut health. The fibre in them helps prevent and treat constipation and irritable bowel syndrome. Since they predominantly contain carbohydrates, they are easy to digest and may also facilitate digestion.
