Apart from being sweet and addictive, potatoes have many health benefits. They help in improving digestion, reducing levels of cholesterol, protecting your skin, reducing blood pressure and reducing insomnia among many others. Despite all the benefits it has, the ultimate point of enjoying food is how pleasing it is to our taste buds.
Because I am such a lover of potatoes, I ventured into finding new and exciting recipes to prepare them. Cooking only one way tends to bore your taste buds. Here are a few recipes you can try.
Diner Home Fries
Ingredients
7 large potatoes
One large onion
Red/black pepper (ground)
Salt
Cooking oil
Preparation
Peel the potatoes and cut them into small cubes.
Put the cubed potatoes in a pot and cover with hot water slightly above the level of the potatoes.
Boil the potatoes, ensure they do not overcook to avoid crushing. They should be tender.
Drain the cooked potatoes of all the water. In the pot with potatoes add salt to taste and the pepper. Then leave the potatoes aside for a while.
Slice the onions according to your preference.
Heat a pan, and add the cooking oil.
Add the sliced onions and immediately add salt to taste.
Keep stirring the onions. Ensure they do not turn brown.
Once the onions have stopped being crunchy remove them from the heat. Remove the onions from the pan.
Using the same pan that cooked the onions (to retain the flavour), add a tablespoon of margarine or oil.
Add your potatoes to the pan in a single layer and cook for a minute on each side.
Once the potatoes are done, add the cooked onions and mix.

Potato-Spinach bake
3 bunches of Spinach or 250 g.
6 large potatoes
1 cup of cream
4 cloves of garlic
2 tablespoons of mustard
Preparation
The potatoes should be sliced as thinly as possible.
Crust the garlic.
Boil the spinach until it becomes flaccid. Drain the excess water and chop finely.
Put some foil in a cake pan, then spread some oil on it with a brush.
Place a layer of the finely chopped potatoes on it then spread half your spinach on the potatoes.
Pour half the cream on that layer, then put some garlic, and mustard.
Repeat the layering until all your ingredients are finished.
Cover with foil and bake for 1 hour.
Remove the foil and bake for an extra 30 min until it browns slightly.
Potato salad
Ingredients
4 eggs
8 potatoes
2 chopped onions
I large cucumber
Freshly chopped parsley (as much as you want)
A cup of mayonnaise
2 teaspoons of lemon juice
Preparation
Boil the eggs.
Cool the eggs in cold water, remove the shells and dice them into pieces.
Cut the potatoes in cubes and parboil them.
Fry the chopped onions in a pan until tender.
Chop the cucumber and parsley, and combine with the rest of the ingredients in a bowl.
Add the mayonnaise and stir. After uniform distribution, you add the lemon juice to add flavour.
