5 Step Recipe For Veggies

Are you a veggie and you feel you have run out of ideas when it comes to cooking different dishes? Or maybe, you are not a veggie, but you are willing to balance your diet a little bit and replace meat with other types of food.

Whether one option or the other, I am going to help you out with them. Today, you are going to learn how to cook vegan meatloaf with barbecue sauce and ingredients that you surely have at home. You won’t regret it!

Why meatloaf?

As you are going to find out while you keep reading this article, one of the main ingredients of the vegan meatloaf is brown rice, which is a great source of calcium, iron, manganese and magnesium.

This brown-rice-based vegan meatloaf is ideal to include other kinds of food in your diet, such as lentils or mushrooms. So, not only are you going to incorporate all brown rice properties, but you will get the ones from the lentils and vegetables as well.

What’s more, this recipe is so easy to prepare that you are going to need to follow just 5 steps to have it ready. So practical, don’t you think so?

This recipe will be served with barbecue sauce, which will give it a distinctive touch.

Ingredients

  • 1/2 packet of brown rice.
  • Nonstick spray.
  • 1/4 cup of canola oil.
  • 1/2 lb. of chopped mushrooms.
  • A pinch of salt.
  • A pinch of black pepper.
  • 1 small diced onion.
  • 2 minced cloves of garlic.
  • 1/2 cup of walnuts.
  • 1/2 can of drained and rinsed lentils.
  • 1/4 cup of chopped fresh parsley.
  • 1/4 cup of breadcrumbs.
  • 1/4 cup of quick oats.
  • 3 tbsp of ground flax meal.
  • 1/4 cup of barbecue sauce.
  • 1/4 cup of soy sauce.

Recipe

Step 1

To begin with, preheat the oven to 400°F. Cook the rice according to package instructions. Let it cool completely. Coat a loaf pan with nonstick spray and line with parchment paper up to the edges.

Step 2

Meanwhile, set a pan over high heat and add the oil. Add the mushrooms, the salt and the pepper and sauté everything until it starts to brown. It will take about 10 minutes. Then, add the onion and the garlic and cook for about 6 or 8 minutes, until it is tender and all the liquid evaporates. Let it cool.

Step 3

Put the walnuts into a food processor bowl and pulse them until they become crumbly. Add half of the rice, the mushroom mixture, half of the lentils and the parsley. Mash the mixture until it coarsely grounds and all the ingredients come together into a paste-like, soft mixture. After that, grab a bowl and add the walnut mixture, the rest of the rice, the oats, the lentils, the flax meal, all the breadcrumbs, 1/4 cup of barbecue sauce and the soy sauce and combine everything.

Step 4

Then, grab a loaf pan and prepare it. Put all the mixture in it and smooth the top with a spoon. Bake it for about 30 minutes. The loaf should be golden brown and set.

Step 5

Finally, brush the loaf with the rest of the barbecue sauce and bake it for about 5 minutes. The barbecue sauce should be bubbling and sticky. Let it sit for about 15 minutes. Lift the loaf from the pan, using parchment paper. Cut the loaf into slices and serve.
