Butter makes some meals taste delicious such as baked goods, sauces, eggs and steaks. Thanks to its rich flavour and texture, it has been used to prepare food for thousands of years. However, it’s easy to get carried away and include it in every dish. This won’t work since butter doesn’t work well for all dishes. Every cooking fat has its strengths and weaknesses and it’s necessary to know which foods you shouldn’t cook with butter. Here are some.

  1. Hash Browns

Hash browns should be as crispy as possible. This is why you need to pat them dry before frying them. However, if you use butter to fry them, you won’t be able to achieve this crispiness since it’s made up of 20% water which can make potatoes soggy. Though it’s not disastrous, your hash browns won’t come out perfectly if you use butter. Salads are meant to be healthy. Therefore, using butter as a dressing defeats this purpose. Though it makes it tasty, it isn’t an ideal salad dressing. It’s common to add butter between the skin and meat of a chicken before roasting or grilling it for extra flavour. However, it’s not advisable to rub it on top of meats or vegetables when roasting or grilling. Butter burns easily when exposed to high temperatures. It also has a low smoke point which is the point it starts to smoke and taste burned. Therefore, if you roast your food with it, it will certainly taste burned.

Due to its moisture content, delicate fish can fall apart when cooked with butter. Butter also browns quickly and might change the flavour and appearance of the fish. You may have to keep turning the fish to keep it from burning which can make it fall apart. For these reasons, many people prefer cooking fish using more stable oil like olive oil. Cooking Asian stir fries with butter is generally not recommended since it involves cooking at high temperatures. Butter doesn’t do well in high temperatures and it can lead to burning. Vegetable oil is ideal for stir-fries since it can withstand high temperatures without smoking or burning. It’s also a milk product that might not pair well with some of the ingredients of a traditional stir fry such as soy sauce.
