If you’re a fan of chocolate and Baileys, then I have an extra treat that you’ll enjoy. Everything’s better with a little splash of alcohol, even food. Contrary to popular belief, adding alcohol to food will not get you drunk. It will, however, give your food a rich, flavourful taste. What better way to enjoy your favourite alcoholic beverage than in your favourite dessert?
Chocolate mug cake is one of the most popular homemade desserts. It’s simple but melts in your mouth. With a splash of Bailey’s, this already tasty recipe becomes a mouth-watering treat. It is also very quick and easy to make. Therefore, this chocolate mug cake recipe is the perfect late-night dessert for you and your date or when you want to spoil yourself with a homemade cake.
Just a heads up. Mug cakes can sometimes turn out dry and crumbly due to the extreme heat. However, this eggless recipe turned out moist and delicious. The cake does rise as well (obviously) so make sure you leave enough room in the cup to allow this. Use a microwave-friendly mug and check your microwave settings to ensure it’s set to high.
Ingredients (2 Servings)
5 tablespoons of all-purpose flour
2 tablespoons of cocoa powder
¼ teaspoon of baking powder
2-3 tablespoons of sugar
2 tablespoons of vegetable oil
Pinch of salt
¼ cup of milk
1 shot of Baileys Cream Liquor
Dash of vanilla essence (optional)
Chocolate shavings (optional)
Preparation
Sift the flour, cocoa powder, and baking powder into a mixing bowl. Add the sugar and salt then mix all the dry ingredients well until they’re all blended.
Add warm milk and vegetable oil to the dry ingredients. Mix the ingredients together until you get a smooth, thick consistency. Add the vanilla essence and Baileys then mix into the batter.
Prepare two mugs or one large mug and pour the batter ¾ way into the mugs. Cover with a warm cloth. Set the microwave to high then cook for 3 minutes. Ensure that you don’t overcook as this will dry your cake.
Check to see if the cake is ready by poking it using a fork. Your cake should be ready if it’s risen and there’s no residue on the fork. If it hasn’t completely cooked, return to the microwave for 1 minute.
Once it’s done, remove it from the microwave, and allow it to cool. If you want to garnish for the presentation, you can add a scoop of vanilla ice cream on top or chocolate shavings.
