You can prepare almost anything using a microwave. However, most of us use it to re-heat food mostly because we don’t know that some recipes can be used in a microwave. Microwave recipes are like any other recipes. They offer nutritional value, variety and come in handy when you need to fix a delicious meal quickly. From cakes to soups to grilled chicken, here are some microwave recipes you should try.

  1. Grilled Asian Chicken

Chicken is one of the best meals to serve guests but it takes a long time to prepare especially if you’re grilling it. So, if you need to prepare a last-minute dinner, this is the perfect recipe for you.  This recipe is perfect if you.

Ingredients

  • 4 chicken breasts (halved, skinless & boneless)
  • 2 garlic cloves (crushed)
  • ¼ ginger root (grated)
  • ¼ cup of soy sauce
  • 2 tablespoons of honey
  • Oil
  • Salt

Method

Mix the soy sauce, oil, ginger, honey, and garlic in a microwave-friendly bowl. Heat for 1 minute then stir then heat again for 30 seconds. Place the chicken in a shallow dish and pour the mixture on it then leave it to marinate for 15 minutes. Pre-heat the oven to medium-high heat. Drain the marinade and put the chicken in to cook for 10 minutes. Brush it with oil then turn and cook for another 15 minutes. Remove the chicken and drizzle it with the remaining marinade then serve.

  1. Peanut Butter & Jam Brownies

If you want to indulge in a mouth-watering dessert but don’t want to spend hours to prepare, this brownies recipe only takes 15 minutes. Additionally, it offers good practice if you’re not good at baking.

Ingredients

  • 3 ½ tablespoons of peanut butter
  • 5 tablespoons of butter
  • 2 tablespoons of cocoa powder
  • 1 egg
  • 50 grams of flour
  • 3 teaspoons of jam
  • 7 tablespoons of sugar

Method

Add peanut butter and butter in a microwave-friendly bowl then heat for 30 seconds until it’s melted. Stir thoroughly, cool then add the egg and mix. Grease a microwave-friendly round dish with butter then place a cling film. Pour the mixture into the dish then sieve flour and cocoa powder. Add sugar and mix gently until a smooth consistency. Make holes in the mixture using a teaspoon and fill them with jam. Cook in the microwave for 3-4 minutes then leave them to cool for 15 minutes. Cooking vegetables in a microwave is actually healthier than cooking them for a shorter time on a cooker as they retain their nutrients better. Therefore, this recipe is not only quicker than using a cooker but also healthier.

Ingredients

  • 1 head of broccoli (chopped)
  • 2 garlic cloves (minced)
  • 2 tablespoons of butter
  • ½ lemon (juiced)

Method

Put the butter, broccoli, and garlic in a microwave-friendly container. Add a tablespoon of water and sprinkle some salt. Cover with a wet paper towel or cloth and microwave for 2-3 minutes. Make sure the broccoli is cooked but still crunchy. Remove and squeeze lemon juice on it then toss to make sure it’s evenly coated. Serve with rice and stew.

  1. Baked Sweet Potatoes

This light and nutritious meal is perfect for lunchtime if you’re pressed for time. Not to mention, you can prepare it at the office if there is a microwave.

Ingredients

  • 1 sweet Potato
  • Butter
  • Salt
  • Finely ground black pepper

Method

Wash the sweet potato then pat dry. Pierce all around severally with a fork. Put it in a microwave-friendly plate and cook for 5 minutes turning halfway through. Confirm it’s tender by piercing with a fork. If not, microwave for another 5 minutes. Remove it and split it in half. Sprinkle salt and pepper. Add butter and let it melt. Serve.

  1. Pumpkin Soup

Ingredients

  • ½ Pumpkin
  • 3 cups of water/milk
  • Salt
  • 1 teaspoon of curry powder
  • 1 teaspoon of chicken cube
  • Pepper

Method

Dice the pumpkin and put all the ingredients in a microwave-friendly bowl. Microwave for 12 minutes and allow into cool. Puree the mixture with a masher or blender. Add cream for the best consistency. Serve with bread.
